Easy and Healthy Packed Lunch Ideas

Written by Erica Paredes

Are you tired of the same fast food establishments that surround your office or spending too much money per week on lunch? Do you want to stop eating leftovers for lunch? There are many things you can do to satisfy your hunger pangs especially if you don't have more than an hour to eat in between work. Here are some ideas to keep you excited every time you open your lunch bag:

Cold sandwiches - Although you could bring hot sandwiches to the office, they might get soggy from the heat trapped in the container you put it in. Cold sandwiches are just as good and will keep better in the fridge. Try a few combinations such as turkey ham, cheese and lettuce and tomatoes, or grilled chicken with tarragon and baby spinach. If you want something sweet, try fat-free peanut butter with banana slices.

DIY salads - So your salad doesn't get soggy, you can bring your ingredients in separate containers and assemble when it's time to eat. For instance, you can have your leaves in a resealable bag, a chopped egg in a small container, sliced tomatoes, tuna and some dressing. All you need to do at lunch time is mix everything in one bowl and enjoy! Freshness guaranteed!

Fresh soup - Soups are always a hearty and filling meal so instead of buying cup noodles or other instant soups with nutritional value, you can make big batches of your favorite soups at home and bring them to work. If you’re lucky, your office has a microwave where you can heat them at lunch time. A few ideas are roasted tomato and oregano, pumpkin and rosemary and even a hearty minestrone!

Fruit parfait - This is usually a breakfast food but who is to say you can't have it for lunch? Pack a container of mixed fruit such as bananas, kiwi and strawberry, a container of vanilla yogurt, and some granola and pile them into layers. Voila, a pretty, delicious and healthy meal!

Green smoothie - Not much time to sit for long to eat but want to get all the necessary nutrients in? Try a green smoothie. Pick your favorite greens such as spinach, kale or lettuce and add your favorite fruit like bananas, strawberries or pineapple and whizz in a blender. You have a quick and easy meal that provides you with energy and vitamins you need for the day!
