For many people, having to shovel down a certain number of servings of fruit and vegetables daily is not easy task. Some may say they have no time to prepare their own food and end up grabbing the easiest thing to eat on the go, while others simply dislike it!

It is not easy to love these healthy foods if you have become accustomed to ignoring them for most of your life, but here are a few ways to get your fruit and vegetables in healthy and delicious ways:

Guacamole - Guacamole is essentially made out of avocados, chopped onions and tomatoes, coriander and lime juice. It's a great accompaniment to low-sodium or wholegrain tortilla chips if you want a small snack in the middle of the day. Remember not to go overboard with the chips! A serving of guacamole can give you a part of your daily dose of potassium, folate, copper and vitamin B-6.

Roasted Tomato Soup - Instead of opening up a can of soup, make your own! Slice up your tomatoes and roast with your favorite herbs and spices and whizz in a blender, adding a bit of low sodium vegetable stock if it's too thick. For added benefits, throw in some chopped celery and carrots too. This is a good source of Vitamin E, Thiamin, Niacin, Lycopene, Vitamins C, K and dietary fiber.

Quinoa Salad - If you love your rice then you will adore quinoa. This protein and fiber rich, low carb grain is a great replacement for rice if you are on a diet. Add your favorite vegetables to half a cup of quinoa and sprinkle with your favorite herbs and spices. My favorite is quinoa cooked in vegetable stock and mixed with lentils, roasted squash and a bit of tarragon! This is a good source of Vitamin C, Iron, Manganese and Phosphorus.

Fruit and Vegetable Juices - The thought of vegetable juice probably doesn't sound very appealing if you are not really into your greens, but mix it with some fruit and voila, a deliciously healthy meal in a cup! Try this: Carrot, Apple and Guava for a dose of vitamins A and C.

Mixed Fruit and Vegetable Salad - Who said salads have to be boring? Another way to get both your fruits and vegetables at the same time is to mix and match them to create healthy meals. Try an Asian inspired one with mixed greens, baby spinach, pomelo slices, peanuts and home made nuoc cham dressing!
